Over the years that we’ve been brewing FRESH we’ve used an impressive lineup of hop varieties. We love local, especially with hops from our good friends at Freestyle hop farm, then there’s been a respectable amount of Australian hops from across the ditch and, of course, mounds of big bold, sassy US varieties that have defined the NEIPA style. This month we’re trying something different. We haven’t used a lot of European varieties in FRESH before. European hops have traditionally been far more delicate than US varieties, often more suited to brewing pilsners rather than big IPA’s. Things are changing though and a number of European countries have been releasing new hop varieties with bigger, bolder flavour profiles. FRESH AUG features one of these more recent European contenders. Styrian Wolf is a Slovenian variety described as having sweet tropical and floral notes. In this brew we’ve used a base of extra light lager, wheat and golden naked oats to create a clean, smooth sweet malt base with just a touch of hot side hop and then dry hopped with Styrian Wolf, backed up with a touch of Mosaic Cryo and Strata. The result delivers a whole load of fresh new flavours, perhaps a little more restrained than brews driven by US varieties, but still smooth and lush with distinct lemon citrus notes, tropical fruits (think lychee, rambutan and dragon fruit), elderflower and ripe, freshly cut rockmelon. FRESH flavour, FRESH fun. It’s always cool to try something new. Fresh IPA, a rolling, ever-changing, monthly series of one-offs, brewed in small batches and available only from our brewery outlets and only while stocks last. Each batch is an opportunity to try a new brewery fresh IPA, unfiltered and unfined, showcasing a unique combination of yeast, malt and hops. Just fun, fresh hoppy beer at its best.
